Viticulture - Garnacha

Garnacha old vines are bush trained at very low densities of the order of 1500 feet / ha.

The yields of these vines are very limited, between 1500 and 2500 kg of grapes per hectare.

Given the weather conditions, the sanitary state of the crop is generally excellent with very few treatments (exclusively of sulfur powder).

The topsoil care of these old vines with low density is only by mechanical interventions, without the use of chemical weed killers.

The challenge is to achieve a good phenolic maturity, guaranteeing the color and structure of the wine, without obtaining alcoholic degrees exaggerated.

Besides Garnacha, the D.O. Calatayud permits the cultivation and vinification other varieties, some "international" as the Merlot, the Syrah and the Cabernet Sauvignon, and others more local as the Tinta Fina.

The Syrah is quite recent in the region but the qualitative results are stunning.

An interesting detail, the harvest at Calatayud are late and very particularly for old vines. They usually start around October 15.
